I sure like those spicy noodles including those sichuan spiced noodles.
However, for my own liking, I like moderate spiced dishes including noodles because too spicy burning hot dishes can numbed our taste buds except burning hot sensation in our mouth and tongue and around our mouth. That's not cool and all it taste was chilli hot which tends to overwhelmed everything else.
I enjoy my spicy dishes and its flavors with moderate chilli spices. Hot but not burning hot. To me shiok is having a moderately spicy hot noodles or dishes but not burning hot that I have to endure and wallup loads of cool drinks thereafter.
Yes, you have heard the word "moderation" from my posts lately as I believed that "moderation" is the key to enjoy one's indulgence whether in food & beverages or others.No need to diet or stop doing what we liked or loved .... except do it in moderation.
