I made diced seasoned cucumbers and vinegar cooked potatoes too ... all real stuff you can order in the north ..

dice potatoes into fine strips with a dicer, boil it in water WITH vinegar ... this makes the potatoes crunchy instead of starchy and powdery ....
cool and dry it out some, then toss with chili flakes, salt, saseme seed oil, saseme seeds and touch of soy sauce and vinegar .... -
